Vinification

Taste Profile ‘Cava’ is the term indicating according to the Greek appellation rulesthat a wine of such a type has been aged for at least three years: this one has been aged in cask for three and has enormous depth and a luscious aftertaste. The small proportion of Mavrodaphne (the basis of the great sweet wines of the northern Peloponnese) darkens and sweetens this chocolatey, toffeeish, viscous wine.

The wine was named Best Old World Red by Steven Spurrier in the March 2006 issue of Decanter.
