Vinification The vineyard is called Kokkinogia and sits on a clay loamy topsoil and well-drained rocky sub soil. Green harvest reduces the yield by 30% and controlled yields (40hl/ha) ensure high concentration of the grapes. The grapes are harvested by hands in small baskets and undergo a pre fermentation maceration for 8 hours at low temperature. The alcoholic fermentation takes place in stainless steel for 12 days, followed by a 10-day maceration on lees.
Taste Profile The excellent conditions of 2004 and the developing maturity of the vines have produced an excellent wine. The minerality of Assyrtiko and herbal notes of Sauvignon Blanc are harmoniously discernible on the nose and there is excellent balance in the mouth. The acidity helps a very clean and long finish.
