Vinification Grapes picked on 8/9 September 2004 in clear weather. Classic white wine vinification over 15 days. 3 hours' maceration at 12 C. Fermentation at 18-19 C. Bottled from tank after 3-4 months after stabilisation at -4 C.
Taste Profile This wine (of which 30,000 bottles were produced) is from a single vineyard of 2.8 hectares located near Embonas at an altitude of 750-800 metres with a north west orientation. The vines are 15-18 years old and planted on stony ground with light clay. A classic but gentle method of vinification has been followed resulting in a delicate, fresh wine. There are notes of pear, honey and lime, excellent acidity and a quite distinctive minerality.
