Vinification Hand picked large bunches; overnight maceration at 12 C. Fermentation in tank for 15 days at 16-20 C. Blending after fermentation.
Taste Profile Perhaps the most unusual rosé in the world. Xinomavro, literally ‘sharp black’, more typically makes elegant, tannic reds with strawberry and spice finish. The classic rosé vinification, light pressing and fermentation without skins, has produced a fresh, clean wine with excellent fruit and acid balance, a tart berry nose and intense clarity of colour.
