Vinification Katsaros only believes in using natural fertilizers in the vineyards. The biological care at the vineyard is coupled with the limited yield from the 8-year-old vines. The grapes are hand-picked and yields are low. The wine is barrel-fermented and aged with frequent stirring of the lees for 7 months in 100% new French oak.
Taste Profile A rich, buttery texture envelopes a clearly delineated structure. Well balanced with an excellent finish.
